Midair rockets aren't so hard... just get your mind to anticipate movement better, practice on bots? Even though bot movement is radically different than player movement, the only difference is that usually other players are strafe jumping and moving faster, which means your brain has to react quicker to movement.
The trick to it is to keep your eyes on the enemy the whole time. You can make snap shots this way, or you can keep your crosshair on them and make small adjustments as they move. After you get good at this, your brain will be INCREDIBLE at judging space and time. Although completely unrelated, I recommend that you watch this BF2 video to learn how to judge space and time. This is made by Safrguns, a legend in BF2; he's arguably the BEST tanker in the whole community, no one can shoot jets out of the sky (yes, shooting jets with tank shells) like he can. Many of us consider him the father of tank versus air combat. He's incredible, and his philosophy is impeccable, and relative to all forms of learning (including QL):

I love Get Quaked 3. It's the video that made me start playing Quake. Another video completely up to the same skill level as GQ3 is Lyon Connection. Gaz, or Camping Gaz, is known by many to be the father of the trick jumping scene in Q3. Also, he was the first guy to be awarded "Merciless" in Quake Live, meaning that he's the first person to get 100k kills (see the thread in QL forums
here).
